Now that it's Spring in New York, so many kinds of greens and herbs are showing up at the Union Square Greenmarket, everything from wintered-over broccoli raabe to claytonia and mache. Many of those that are most often eaten raw in a salad are great cooked as well. Here's an easy meal featuring sautÃ©ed scallops in a tarragon brown butter sauce accompanied by garlicky sautÃ©ed arugula. It only takes ten minutes start to finish.
